It might not seem like it yet, but cooler fall weather is right around the corner. Plant cool weather herbs like parsley and cilantro now to enjoy through fall and winter. One of the best benefits of growing parsley now rather than in the summer is that you don't have to contend with swallowtail caterpillars in the winter! They ate my parsley plants down to nubs overnight last week.
Arugula, which can be used as a salad green or as a seasoning herb, also grows well in cool weather. Arugula will be less bitter when grown in cooler weather. Hot weather makes it bolt, changing the physiology, and thus the flavor, of the plant.
A yummy yummy way to enjoy arugula: Slice a couple pears and place under the broiler. Brown them, then remove and cut into chunks. Toss them over a bed of arugula with pecan pieces and feta or goat cheese. No dressing needed!
